I’m sure other tangy cheeses work well too! And in terms of how to use the combo, I’ve done salads (the obvious), pasta, quiches/tarts, and bruschetta.

Brett’s also made a beet risotto that was shockingly pink but really pretty good.

I’d love to have more beets in our CSA box! We’re currently drowning in okra, so if you have any suggestions for that …
